When it comes to food I look for the best flavour and then an attractive presentation. Having founded the first cookery school in Ireland back in 1978, I work hard to maintain my reputation for great food.
Whatever you require from a buffet to a full silver service banquet, I can supply it. Your menu will be tailor made after discussing your taste, budget, style and venue choice.
Whether you would like your meal simple or sumptuous, with straight forward service or an imaginative presentation, I have the flexibility to cater a candlelit dinner for 10 or a 300 person fund-raiser.
With a core staff of myself, two assistants and a team of waiters and waitresses, I can offer a far more personalised and flexible service than a corporate catering company.

I hope the samples on this site will give you some tempting ideas of the type of food that I serve. My food tends to be more homely than most restaurants in presentation and, though I never embraced the idea that food is art, I do think that it should look attractive.
Like any cook, my recipes are gathered from literally hundreds of sources. Through the cookery school I have been lucky to cook with chefs such as Guillame Lebrun of Patrick Guilbauds, Paul & Jeannie Rankin, Sophie Grigson and Lloyd Grossman.
Through overseas Irish food promotions and on my travels I have picked up ideas from all over the world. If you would like almost any dish for almost any occasion, I am very happy to produce it: Simply tell me what you would like me to do. All of the dishes on the menus are interchangeable from one to another.
